Spicy Mexican Crock Pot Recipe
Ingredients

1 | Chipotle pepper in adobo sauce, minced |
3 cloves | Garlic, minced |
1 tsp | Ground cumin |

1/2 tsp | Paprika |
1/2 tsp | Dried oregano |
1/2 tsp | Salt |
1/4 tsp | Black pepper |
1 can (15 oz) | Diced tomatoes, undrained |
1 can (15 oz) | Black beans, drained and rinsed |
1 cup | Corn kernels |
1 lb | Chicken breasts, boneless and skinless |
1/4 cup | Fresh cilantro, chopped |
Directions
- In a crock pot, combine the diced onion, sliced bell peppers, diced jalapeno peppers, minced chipotle pepper, minced garlic, ground cumin, chili powder, paprika, dried oregano, salt, and black pepper.
- Add the diced tomatoes (undrained), black beans (drained and rinsed), and corn kernels to the crock pot. Stir well to combine all the ingredients.
- Place the chicken breasts on top of the mixture in the crock pot.
- Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the chicken is cooked through and tender.
- Using two forks, shred the cooked chicken in the crock pot.
- Stir in the chopped cilantro.
- Serve the spicy Mexican dish hot with your favorite toppings, such as shredded cheese, sour cream, or avocado.
